Silken Tofu with Spring Onion & Garlic Sauce 🇨🇳

At the back of my refrigerator you will often find a block of silken tofu tucked away for times when I didn't feel like eating a lot or when I just wanted something light and nutritious for supper.  Silken tofu is so versatile and I can think of so many ways of using it.  There is something about its delicate texture and milky appearance that is really appetising. This recipe cannot be simpler.  The block of tofu is drained, sliced into eighths, heated in the microwave oven for a minute or so, and smothered over with a spring onion and garlic sauce.  Serve on its own, or with some rice.  On hot summer days, it is quite refreshing to eat it cold.

Serve 1

INGREDIENTS
  • 1 packet (300g / 10 oz) silken tofu
  • 1½ tablespoon olive or vegetable oil
  • 1½ tablespoon light soy sauce
  • ½ teaspoon sugar
  • 3 cloves of garlic, finely sliced
  • 2 spring onions, finely sliced
  • 1 teaspoon sesame oil

METHOD
  1. Gently invert tofu from its packet onto a heatproof plate.  Take care not to break the block.  Drain off any water that comes out of the packet by tilting the plate slightly over the sink.  Pat the tofu dry with paper towels.
  2. Cut the tofu crosswise into 8 equal slices.
  3. Heat up the tofu, covered, in the microwave oven on high for 1-2 minutes.
  4. Heat oil in a small saucepan until moderately hot.  Add sliced spring onions and garlic. Sauté for a minute until slightly brown.  Stir in soy sauce and sugar.  Continue to cook for another minute.
  5. Pour the hot sauce onto the tofu.  Sprinkle on the sesame oil.
