A Singaporean friend told me when she first came to Australia, she was invited to a party and asked to bring a plate. And that's what she did - brought a plate along, not understanding that she was supposed to bring something on the plate as well to share with others! A great way to entertain without one person having to provide all the food, and you always get such a diversity of goodies. And here's a popular, no fuss, 'bring a plate' recipe for morning or afternoon tea with family and friends. Special thanks to Matthew, aged 11, whom I have the pleasure of watching him grow up, for road testing this recipe at his home kitchen.
Makes 12
INGREDIENTS
- 2 eggs
- 1 cup milk
- 2 cups shredded tasty cheese
- 60g / 2oz chopped ham
- ½ cup chopped spring onions
- 1 cup self-raising flour
- 1 teaspoon baking powder
- pinch of salt
- Whisk eggs and milk together in a large bowl.
- Stir in flour, baking powder and salt.
- Add cheese, ham and spring onions. Lightly combine.
- Grease a 12 cup muffin pan or line the cups with patty pans to prevent the muffins from sticking.
- Bake in a preheated 190°C/375°F oven for 15 minutes.
- Leave the muffins in the pan for 10 minutes to cool before removing.
